Institute of the Mead-Brewing is a scientific-research organization, which was created with the aim to elaborate the program “Restoration of the Traditional Folk Beverages” and to put it into practice. The aim of the Institute of the Mead Brewing is not only to restore the recipes of the past, but also to re-interpret them creatively, considering modern tastes. No matter how numerous the variations of taste, colour and style of presenting the products are, the Institute stands by its main principle: no artificial supplements and boosters – only natural ingredients and natural fermentation. All the elaborations of the Institute are aiming at the harmonious combination of the New and the Old. Modern technological process allows to maintain the “naturalness”, simultaneously enriching the formulas with the new modern ideas. OOO “Medovarus” is a production basis of the Institute of the Mead-Brewing (Until 2007 it was OOO “Hlebnoe”) – a few production sites in the European part of the Russian Federation. At present the main trends of the elaborations of the Institute of the Mead-Brewing are: - mild alcoholic heady meads - drinking meads, traditional kvass and other non-alcoholic beverages - sbeeten and other hot beverages - strong traditional alcoholic beverages on basis of honey (shibach, medviak)
Heady meads, elaborated by the Institute of the Mead Brewing, received the highest awards at the All-Russian exhibitions in Moscow (“Prodexpo”, “Worldfood”), Saint-Petersburg (“Beer Auction”, “Peterfood”) and at the International Food exhibition in Dijon (France).
